It’s my favorite time of year – football season. Don’t care if it’s college football or pro. I love it all. One of the other things I love about football season is a good watch party. Which means food. And drinks. But, one of my favorite things about watch parties is snacking on appetizers all day or night long while watching my team.
Last weekend my friend Amanda invited us to a college football watch party and I volunteered to bring an appetizer – sausage balls. She sent me a message after she saw my post about the sausage balls and said…excited to eat these at the next party! So, I knew what I was bringing.
The morning before the party, my husband and I were talking about what else we should bring…yada yada yada…and to my pleasant surprise, he said, “I’ll make an appetizer too.” Well, alrighty then…bring it on! He went on to make these delicious pepperoncinis with cream cheese and salami.
This is probably one of the easiest appetizers you’ll ever make, and it’s always a HUGE hit with everyone. And, another bonus, it’s low carb.
You’ll need four things.
- Cream cheese
- Dry hard salami (the ones that are about 3 inches in diameter, not the really big slices)
That’s it. Before you get into assembly mode, you’ll want to pull the cream cheese out of the fridge and let it come up to room temperature. It will make stuffing the pepperoncinis much easier.
First, cut off the tops of the pepperoncinis (and get all of the seeds out) and slice them down the middle, but don’t slice all the way through. You’re going to stuff these babies with the cream cheese. If you cut all the way through, cream cheese is going to ooze out everywhere. Not good. Also, you want to drain them a bit so there isn’t juice everywhere.
Then, fill the pepperoncinis with cream cheese by putting about a teaspoon of it on a butter knife.
And finally, fold the salami in half and place the stuffed pepperoncini in the middle. Then, wrap the salami around the pepperoncini and skewer it with a toothpick.
